Almond Pickerel Fillets

This is a recipe worth sharing! Easy and very good.

Almond Pickerel Fillets
  • 1/4 cup flour
  • 1 egg, lightly beaten
  • 1 tsp salt
  • 1/4 cup dry bread crumbs
  • 1/4 cup ground almonds
  • 1/2 cup butter
  • 1 pound pickeral fillets
  • 1 Tbsp fresh lemon
  • 1/4 cup sliced almonds
  • salt and pepper
  1. Place flour in a shallow bowl.
  2. In another bowl, mix egg and salt.
  3. In a third bowl, mix the bread crumbs and ground almonds.
  4. Coat fillets in flour, egg, then crumbs, coating both sides.
  5. Set on rack to dry for a little while letting 2 Tbsp butter heat in a frying pan.
  6. Fry fish, turning once and adding another 2 Tbsp of butter, until fish flakes easily (about 5 minutes).
  7. Plate the fish and put it in the oven just to keep it warm.
  8. Add the remaining butter to the pan.
  9. Add the almonds and stir fry until they're browned.
  10. Add the lemon and salt and pepper.
  11. Pour the almond topping over the fish and serve.
